In this month’s Chef’s Table, we’re getting organic with an uber-fresh Farro Salad from Executive Chef Marissa Burback of Hilton Portland & Executive Tower’s HopCity Tavern + Market. Portland is known for its farm-to-table freshness of ingredients, and Chef Burback’s creations are no exception. She’s developed quite the local name for herself creating healthy, innovative recipes that make the most of local foods. Below, the recipe for her famous Farro Salad.

Farro Salad (serves 1)


Smoky Paprika Dressing:

1 C red wine vinegar

2 T minced garlic

2 T Dijon mustard

3 large red bell peppers, roasted, seeded & peeled

2 T smoked paprika

2 1/4 C canola or vegetable oil

Salt & pepper, as needed


½ C cooked farro

3 T diced, roasted butternut squash

3 T grilled red onion, diced after grilling

3 T roasted red pepper, peeled, seeded & diced

1 1/2 T toasted sliced almonds

1 1/2 C baby spinach

2 T crumbled feta

1/3 C Smoky Paprika Vinaigrette


1. Combine salad ingredients in a large bowl.

2. Dressing: In a food processor blend everything except the oil until smooth. While the machine is running drizzle in the oil, season with salt & pepper as desired.

3. Apply dressing to the salad and serve!

Marissa Burback has been a resident of Portland all her life and knew she wanted to be a chef from a young age. After high school, she attended the Le Cordon Bleu program at Portland’s Western Culinary Institute and served in several of Portland’s best kitchens before being invited on to design the menu and serve as Executive Chef for the gastropub and marketplace of HopCity Tavern + Market.
